2 cups Chicken Breast

8 oz Mushrooms

8 Tortillas
5/2 cups Cheese

Monterey Jack, shredded

1 cup Onion
Notes:

2 cloves Garlic
Notes:

1/4 cup Butter
Notes:

1/2 stick

2 tsp Chili Powder
Notes:

to taste

1 tsp Oregano

1/3 cup Cilantro
Notes:

fresh, chopped


Instructions

Step 1 : Preparation

Melt butter in large skillet. Add chili powder, garlic, and oregano. Saute until fragrant (about 1 minute).

Step 2 : Cooking

Add sliced mushrooms and saute about 10 minutes.

Step 3 : Assembly

Remove from heat. Mix in chicken, onion, and cilantro. Cool 10 minutes. Add cheese and salt & pepper to taste (can be made in advance).

Step 4 : Cooking

Heat a skillet over medium heat. Brush one side of each tortilla lightly with olive oil and sprinkle with kosher salt. Place tortillas in skillet and layer half with cooked chicken and mushroom mixture.Fold tortillas in half.Cook quesadillas for 2-3 minutes on each side, or until cheese is melted and tortillas are golden brown. Serve hot.
