Instructions

Step 1 : Preparation

In a mixing bowl, combine coconut milk, peanut butter, soy sauce, honey, lime juice, garlic, ginger, red curry paste, crushed red pepper, salt, and pepper. Mix well.

Step 2 : Marinating

Place chicken thighs in the crockpot. Pour the marinade over the chicken and toss to coat. Cover and refrigerate for at least 4 hours or overnight.
