2 lbs Chicken Breast
2 tbsp Cilantro

Instructions

Step 1 : Preparation

Place red pepper and onion in bottom of crock pot. Mix peanut butter, lime juice, chicken broth, soy sauce, honey and pour over vegetables.

Step 2 : Preparation

Place chicken breasts on top of crockpot mixture.

Step 3 : Cooking

Cook 3-4 hours on high (or 6-8 hours on low).

Step 4 : Serving

Shred chicken. Serve over rice or in lettuce wraps after garnishing with chopped cilantro and peanuts.
