Season the pork chops with salt and black pepper on both sides.
In a skillet, melt butter over medium-high heat. Add the pork chops and cook for 4-5 minutes per side until browned and cooked through. Remove the pork chops from the skillet and set aside.
In the same skillet, add the sliced mushrooms and minced garlic. Cook for 3-4 minutes until the mushrooms are tender.
Sprinkle flour over the mushrooms and garlic. Stir well to coat. Gradually pour in the chicken stock while stirring constantly. Cook for 2-3 minutes until the sauce thickens.
Stir in the heavy cream and season with salt and black pepper to taste. Cook for an additional 2 minutes.
Place the cooked pork chops back into the skillet with the mushroom garlic sauce. Garnish with chopped parsley. Serve hot.
