Instructions
In a large pot, heat olive oil over medium heat.
Add diced onion, carrots, and celery to the pot. Cook for 5 minutes, or until vegetables are softened.
Add minced garlic, dried thyme, bay leaves, salt, and black pepper to the pot. Cook for 1 minute, or until fragrant.
Add rinsed and drained French lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender.
Remove bay leaves from the soup. Serve hot and enjoy!
