1 cup Long Grain White Rice

2 tsp Cajun Seasoning
1 tsp Thyme

2 Bay Leaves
1 tsp Salt
1/2 tsp Black Pepper
1/4 tsp Cayenne Pepper
1/4 cup Green Onion

Instructions

Step 1 : Preparation

In a large pot, heat some oil over medium heat.

Step 2 : Preparation

Add the onion, green bell pepper, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

Step 3 : Cooking

Add the shrimp and andouille sausage to the pot. Cook until the shrimp are pink and cooked through, about 5 minutes.

Step 4 : Cooking

Stir in the diced tomatoes, chicken stock, rice, Cajun seasoning, thyme, bay leaves, salt, black pepper, and cayenne pepper. Bring to a boil.

Step 5 : Cooking

Reduce the heat to low, cover the pot, and simmer until the rice is cooked and the liquid is absorbed, about 20 minutes.

Step 6 : Serve

Remove the bay leaves from the pot. Serve the shrimp jambalaya hot, garnished with chopped green onion.
