Instructions
In a mixing bowl, combine soy sauce, brown sugar, minced garlic cloves, grated ginger root, and pineapple juice. Whisk until well combined.
Place the pork chops in a ziplock bag and pour the marinade over them. Seal the bag and refrigerate for at least 4 hours or overnight.
Heat cooking oil in a skillet over medium-high heat. Remove the pork chops from the marinade, reserving the marinade. Sear the pork chops on both sides until browned. Transfer the pork chops to a crock pot.
In a small bowl, whisk together the dissolved cornstarch and the reserved marinade. Pour the mixture over the pork chops in the crock pot.
Add sliced green bell pepper, sliced red bell pepper, sliced onion, and pineapple chunks to the crock pot. Season with salt and black pepper.
Cover the crock pot and cook on low heat for 4-6 hours or until the pork chops are tender. Serve hot.
