2 lbs Pork Shoulder
Notes:

boneless, cut into chunks

1 cup Orange Juice

freshly squeezed

1 cup Lime Juice
Notes:

freshly squeezed

4 cloves Garlic Cloves

1 tbsp Cumin
1 tbsp Oregano
1 tsp Salt
1 tsp Black Pepper
2 tbsp Vegetable Oil

Instructions

Step 1 : Preparation

In a mixing bowl, combine the orange juice, lime juice, minced garlic, cumin, oregano, salt, and black pepper.

Step 2 : Marinating

Add the pork shoulder chunks to the marinade and toss to coat. Let it marinate for at least 30 minutes, or overnight for best results.

Step 3 : Cooking

Set the Instant Pot to sauté mode and heat the vegetable oil. Working in batches, sear the marinated pork shoulder chunks until browned on all sides. Remove from the Instant Pot and set aside.

Step 4 : Pressure Cooking

Return all the seared pork shoulder chunks to the Instant Pot. Close the lid and set the pressure release valve to sealing. Cook on high pressure for 45 minutes. Once done, allow the pressure to naturally release for 10 minutes, then manually release any remaining pressure.

Step 5 : Shredding and Serving

Using tongs, transfer the cooked pork shoulder chunks to a cutting board. Shred the meat using two forks. Serve the carnitas in tacos, burritos, or any desired dish.
