Preheat the oven to 400°F (200°C).
In a small bowl, combine salt, black pepper, garlic powder, paprika, onion powder, and dried thyme.
Heat olive oil in a large oven-safe skillet over medium-high heat. Season the pork chops with the prepared spice mixture on both sides. Add the pork chops to the skillet and cook for 3-4 minutes per side, until browned.
Remove the pork chops from the skillet and set aside. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute, until fragrant. Stir in chicken broth and bring to a simmer. Cook for 2-3 minutes, until slightly reduced. Stir in heavy cream and cook for another 2-3 minutes, until the sauce thickens.
Return the pork chops to the skillet and spoon the sauce over them. Transfer the skillet to the preheated oven and bake for 10-15 minutes, until the pork chops are cooked through.
Remove the skillet from the oven and let the pork chops rest for a few minutes. Serve hot with the sauce spooned over them.
