Instructions
In a skillet, heat olive oil over medium heat. Add diced onion, minced garlic, and diced bell pepper. Cook until vegetables are softened, about 5 minutes.
Add ground beef to the skillet with the vegetables. Cook until beef is browned and cooked through, breaking it up with a spatula as it cooks, about 8 minutes.
Stir in diced tomato, cumin, chili powder, paprika, salt, and black pepper. Cook for another 2 minutes to allow the flavors to meld.
Add uncooked rice, chicken stock, corn kernels, and black beans to the skillet. Bring to a simmer, then cover and cook for 15-20 minutes until rice is cooked through. Top with shredded cheese, sliced avocado, and chopped cilantro before serving.
