Instructions
In a soup pot, melt butter over medium heat. Add sliced onions and cook until caramelized, about 20 minutes.
Pour in vegetable broth and white wine. Add bay leaves, thyme, salt, and black pepper. Simmer for 30 minutes.
Preheat the oven. Ladle the soup into ovenproof bowls. Top each bowl with a slice of baguette and shredded Gruyere cheese.
Place the bowls in the oven and bake until the cheese is melted and bubbly, about 10 minutes.
