Instructions
Toss 4 tbsp melted butter with cubed sourdough bread, parmesan, and parsley. Set aside.
Saute onions in remaining 2 tbsp butter in a large skillet until golden brown. Add mushrooms and saute for 5 more minutes.
Stir in buttermilk, cream of mushroom soup, roasted peppers, and shredded cooked chicken. Cook for 5 minutes stirring constantly.
Spoon the chicken mixture into a lightly greased casserole dish and top with the sourdough mixture. Bake at 400F for 15 minutes or until the top is golden brown.
