In a mixing bowl, combine buckwheat flour, almond milk, maple syrup, vanilla extract, and salt. Whisk until smooth.
Heat a non-stick pan over medium heat and lightly grease with coconut oil. Pour a ladleful of batter onto the pan and swirl to spread it evenly. Cook for 2-3 minutes until the edges start to lift. Flip and cook for another 1-2 minutes. Repeat with the remaining batter.
Fill the crepes with your favorite vegan fillings such as fresh fruits, dairy-free yogurt, or nut butter. Roll them up and serve warm.
