Instructions
Cut the chicken breasts into bite-sized pieces. Mince the ginger and garlic. Chop the dried apricots.
Heat olive oil in a skillet over medium heat. Add the minced ginger and garlic, and cook until fragrant. Add the chicken pieces and cook until browned.
Stir in soy sauce, honey, salt, and pepper. Add the chopped apricots and cook for another 5 minutes, stirring occasionally.
Serve the skillet ginger chicken with apricots hot, garnished with some fresh herbs if desired.
