Instructions
Cook the pasta according to package instructions. Drain and set aside.
In a large pot, heat olive oil over medium heat. Add mushrooms and leeks, and cook until softened, about 5 minutes. Add garlic and cook for an additional 1 minute.
Pour in white wine and vegetable broth. Bring to a simmer and cook for 5 minutes.
Add cooked pasta to the pot and toss to coat. Season with salt and black pepper. Serve hot, topped with grated Parmesan cheese and chopped fresh parsley.
