Instructions
Preheat the oven to 200°C (400°F). Season the chicken thighs with salt, pepper, and paprika.
In a skillet, heat olive oil over medium-high heat. Brown the chicken thighs on both sides, then remove from the skillet and set aside.
In the same skillet, cook the bacon until crispy. Add chopped onion and minced garlic, cook until softened. Stir in tomato puree, BBQ sauce, and chicken stock. Simmer for 5 minutes.
Place the chicken thighs back in the skillet with the sauce. Top with shredded cheddar cheese. Bake in the preheated oven for 15 minutes or until the cheese is melted and bubbly.
