Instructions
Heat a Dutch oven over medium heat. Add the beef and cook until browned. Remove the beef from the pot and set aside.
In the same pot, add the onion and garlic. Cook until softened.
Add the paprika and caraway seeds to the pot. Stir to coat the onions and garlic.
Add the tomato paste and beef stock to the pot. Stir to combine.
Return the beef to the pot. Add the potatoes and bell pepper. Season with salt and black pepper to taste. Bring to a simmer, then reduce heat to low and cover. Cook for 1.5-2 hours, or until the beef is tender and the flavors have melded together.
