Instructions
Clean the beef tripe thoroughly and cut it into small pieces.
In a large pot, heat vegetable oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Cook until the vegetables are softened.
Add the beef tripe to the pot and cook for another 5 minutes.
In a separate small pan, heat 2 tablespoons of vegetable oil. Add 2 tablespoons of flour and cook, stirring constantly, until the mixture turns golden brown.
Add the tomato paste and the roux to the pot. Stir well to combine.
Add enough water to cover the ingredients in the pot. Add the bay leaves and chopped parsley. Season with salt and pepper to taste. Bring to a boil, then reduce heat and simmer for 2 hours. Serve hot with a dollop of sour cream on top.
