1 cup Buffalo Sauce
1 cup Vegan Cheese

2 stalks Green Onion

1 tablespoon Lime Juice
1 teaspoon Salt
1 teaspoon Pepper
2 tablespoons Olive Oil

Instructions

Step 1 : Preparation

In a skillet, heat 1 tablespoon of olive oil over medium heat.

Step 2 : Cooking

Add the drained and rinsed chickpeas to the skillet and cook for 5 minutes, stirring occasionally.

Step 3 : Assembly

Place a tortilla on a clean surface and spread 1/4 cup of vegan cheese evenly over half of the tortilla. Top with 1/4 of the cooked chickpeas, 1/4 cup of buffalo sauce, 1/2 of a chopped green onion, and 1/2 tablespoon of chopped cilantro. Fold the tortilla in half to form a quesadilla.

Step 4 : Cooking

Heat the skillet over medium heat and add 1 tablespoon of olive oil. Place the quesadilla in the skillet and cook for 2-3 minutes on each side, until golden brown and crispy. Repeat with the remaining tortillas and filling.
