In a mixing bowl, mash the bananas until smooth.
Add the gluten-free flour, baking powder, salt, cinnamon, eggs, milk, vanilla extract, and honey to the mashed bananas. Mix well until all ingredients are combined.
Heat a non-stick pan over medium heat. Add a small amount of butter to the pan and let it melt. Pour 1/4 cup of the pancake batter onto the pan for each pancake. Cook for 2-3 minutes, or until bubbles form on the surface. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown.
Serve the gluten-free banana pancakes warm with your favorite toppings, such as sliced bananas, honey, or maple syrup.
