2 tbsp Olive Oil

Instructions

Step 1 : Preparation

Preheat the oven to 375°F (190°C).

Step 2 : Chopping Vegetables

Chop the eggplant, zucchini, yellow squash, red bell pepper, yellow bell pepper, onion, and garlic into bite-sized pieces. Dice the tomatoes.

Step 3 : Cooking Ratatouille

In a large oven-safe skillet or baking dish, heat the olive oil over medium heat. Add the chopped vegetables and sauté for 5 minutes, until slightly softened. Season with salt and black pepper to taste. Stir in the diced tomatoes, fresh basil, and fresh thyme.

Step 4 : Baking Ratatouille

Transfer the skillet or baking dish to the preheated oven and bake for 20 minutes, until the vegetables are tender and slightly caramelized.

Step 5 : Serve

Remove from the oven and let cool slightly before serving. Serve hot as a main dish or as a side dish with crusty bread or rice.
