Instructions

Step 1 : Preparation

Preheat the oven to 375°F (190°C).

Step 2 : Cooking Lentils

In a skillet, heat some oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent. Add the diced bell pepper and grated carrot, and cook for another 2-3 minutes. Stir in the cooked lentils, cumin, chili powder, paprika, salt, and black pepper. Cook for 5 minutes, stirring occasionally.

Step 3 : Assembling Enchiladas

Spread a thin layer of tomato sauce on the bottom of a baking dish. Place a tortilla on a flat surface and spoon some of the lentil mixture onto the center. Roll up the tortilla and place it seam-side down in the baking dish. Repeat with the remaining tortillas and lentil mixture.

Step 4 : Baking

Pour the remaining tomato sauce over the enchiladas. Sprinkle vegan cheese on top. Cover the baking dish with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.

Step 5 : Garnish

Remove the enchiladas from the oven and let them cool for a few minutes. Garnish with chopped cilantro.

Step 6 : Serving

Serve the vegan lentil enchiladas hot. Enjoy!
