Boil water in a pot and cook the ramen noodles according to the package instructions. Drain and set aside.
In a shallow bowl, beat the eggs. In another shallow bowl, combine the panko breadcrumbs, all-purpose flour, salt, and black pepper.
Heat vegetable oil in a frying pan over medium heat. Dip each pork loin piece into the beaten eggs, then coat with the breadcrumb mixture. Fry the coated pork loins in the hot oil until golden brown and crispy, about 3-4 minutes per side. Remove from the pan and drain on paper towels.
In the same frying pan, heat tonkatsu sauce over low heat until warm.
Divide the cooked ramen noodles among 5 bowls. Pour the warm tonkatsu sauce over the noodles. Slice the fried pork loins into thin strips and place on top of the noodles. Garnish with chopped green onions and nori seaweed.
Serve the tonkatsu ramen hot and enjoy!
