Instructions
In a large pot, cook the italian sausage over medium heat until browned. Drain any excess fat.
Add the chopped onion and minced garlic to the pot with the italian sausage. Cook for an additional 2-3 minutes, until the onion is translucent.
Add oregano and crushed red pepper. Cook for 1 minute.
Add tomato paste and stir. Add tomatoes, bay leaves, and chicken broth. Bring to boil and simmer for 30 minutes.
Add uncooked pasta and simmer until noodles are tender.
In a separate bowl, mix cheeses together with a pinch of salt & pepper to taste.
Put a dollop of cheese mixture in the bottom of each soup bowl. Serve the soup hot mixing together with cheese and top with chopped fresh basil leaves.
