Instructions

Step 1 : Preparation

Cook the lentils according to package instructions. Drain and set aside.

Step 2 : Sauce

In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

Step 3 : Sauce

Stir in tomato paste, crushed tomatoes, vegetable broth, dried basil, dried oregano, salt, black pepper, and red pepper flakes. Simmer for 10 minutes.

Step 4 : Sauce

Add cooked lentils to the sauce and stir to combine. Simmer for an additional 5 minutes.

Step 5 : Serve

Cook spaghetti according to package instructions. Serve lentil bolognese over spaghetti and top with grated Parmesan cheese, if desired.
