Instructions
Roast the red pepper by placing under broiler until blast and blistered, about 15-20 minutes.
Heat oil to medium, lightly salt and pepper the pork chops.
Brown the pork chops on each side. Remove from pan and set aside.
Put onion in pan, cook until soft, scraping up any brown bits sticking to the pan.
Add wine to deglaze the pan, stirring up onion, wine and pan juices. Then add mojito sauce and blend together. Add chops back into pan with juices. Simmer 10-12 minutes until chops are cooked through.
Remove chops from pan and add red pepper, stir and ladle over the pork chops.
