Instructions
In a mixing bowl, combine the cooked rice, black beans, diced tomatoes, shredded lettuce, chopped cilantro, lime juice, salt, and pepper. Mix well.
Season the chicken breasts with garlic powder, cumin, paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken breasts for 6-8 minutes per side, or until cooked through. Remove from heat and let rest for 5 minutes. Slice the chicken into strips.
Place a tortilla on a clean surface. Spread a spoonful of sour cream on the tortilla. Add a scoop of the rice and bean mixture, followed by sliced chicken, avocado slices, and shredded cheese.
