Instructions
Remove and discard husks and silks from corn; set aside.
Combine red wine vinaigrette and 2½ teaspoons Mexican seasoning. Stir well, set aside.
Rub remaining 1 tablespoon Mexican seasoning on steak.
Place steak, pepper, onion, and corn on grill rack coated with cooking spray. Cover; grill 6 minutes on each side or to desired degree of doneness. Remove steak, pepper, and onion from grill, and keep warm.
Place foil-wrapped tortillas on grill with corn, and grill 3 minutes or until corn is lightly browned.
Cut steak diagonally across grain into ¼-inch-thick slices. Cut kernels from ears of corn.
Toss lettuce with vinaigrette mixture, and divide evenly among 4 plates. Top evenly with steak slices and vegetables. Serve with warm tortillas.
