Pasta Paella is a gluten-free dish that combines the flavors of traditional Spanish paella with pasta. It is a one-pot meal made with orzo, saffron threads, kielbasa sausage, shrimp, peas, and green onions. The Mexican-flavored stewed tomatoes add a delicious twist to this dish.

Instructions
Combine water and saffron threads in a Dutch oven; bring to a boil. Add orzo, and cook according to package directions, omitting salt and fat, drain.
Coat a large saucepan with cooking spray; place over medium heat until hot. Add sausage; sauté 3 minutes. Add tomatoes, and bring to a simmer. Add shrimp; cook 3 to 5 minutes or until shrimp turn pink. Add peas and green onions; simmer 2 minutes. Add cooked orzo, and toss gently.
