1 pound Peeled and deveined jumbo shrimp
3 tablespoon Lemon juice
1 tablespoon Olive oil
1 teaspoon Bottled minced garlic
2 cup Diced seeded tomato

about 2 medium

2 tablespoon Chopped fresh parsley
2 tablespoon Sliced ripe olives
1/4 teaspoon Pepper
1/4 teaspoon Salt
Cooking spray


Step 1 : 

Prepare grill.

Step 2 : 

Thread shrimp evenly onto 4 skewers.

Step 3 : 

Combine lemon juice, oil, and garlic. Pour half of lemon juice mixture over shrimp; set remaining mixture aside.

Step 4 : 

Combine tomato and next 4 ingredients; add reserved juice mixture, stirring well.

Step 5 : 

Place shrimp on grill rack coated with cooking spray; cover and grill 3 minutes on each side or until done.

Step 6 : 

Serve shrimp over tomato mixture.
