Chipotle Gazpacho with Shrimp

Ellen Whiteman

Chipotle Gazpacho with Shrimp is a refreshing and spicy Mexican dish. It is a cold soup made with chopped tomatoes, green bell peppers, peeled cucumbers, and finely chopped onions. The soup is flavored with picante-flavored vegetable juice and canned chipotle chiles. Cooked peeled shrimp is added to the soup for a seafood twist. Seasoned with salt and ground black pepper, this dish is perfect for pescatarians and vegetarians.
