Ingredients

2 cubes yellow squash
Notes:

cut into ½-inch cubes

2 cups grape or cherry tomatoes
2 small small onions
Notes:

peeled, cut into eighths and separated

cooking spray
1/4 teaspoon salt
4 fillets tilapia or other white fish fillets
1 teaspoon Old Bay seasoning
2 teaspoons olive oil
1 tablespoon fresh lime juice
lime wedges

Instructions

Step 1 : Preparation

Preheat broiler.

Step 2 : Cooking Vegetables

Place squash, tomatoes, and onion on a baking sheet coated with cooking spray; coat vegetables lightly with cooking spray, and sprinkle with salt. Broil 10 minutes, stirring once. Transfer vegetables to a bowl, cover and set aside.

Step 3 : Cooking Fish

Spray pan with cooking spray. Place fish (flattest side down) on pan, coat fish lightly with cooking spray. Broil 3 minutes; turn, coat other side of fish with cooking spray, and sprinkle with seasoning. Broil 2 to 3 minutes or until fish flakes easily when tested with a fork.

Step 4 : Finishing

Drizzle olive oil and lime juice over fish and vegetables. Garnish with lime wedges, if desired.
