Instructions

Step 1 : Preparation

Preheat the oven to 375°F (190°C).

Step 2 : Cooking the Meat Sauce

In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat. Add the chopped onion and minced garlic to the skillet and cook until the onion is translucent. Stir in the tomato paste, red wine, cinnamon, allspice, 1/2 teaspoon of salt, and black pepper. Simmer for 10 minutes, then remove from heat.

Step 3 : Preparing the Eggplant

Sprinkle the eggplant slices with 1/2 teaspoon of salt and let them sit for 10 minutes. Rinse the slices under cold water and pat them dry with paper towels.

Step 4 : Assembling the Moussaka

In a greased baking dish, layer half of the eggplant slices on the bottom. Spread half of the meat sauce over the eggplant. Repeat the layers with the remaining eggplant slices and meat sauce.

Step 5 : Preparing the Bechamel Sauce

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Gradually whisk in the milk and cook until the sauce thickens. Remove from heat and stir in the grated Parmesan cheese.

Step 6 : Baking the Moussaka

Pour the bechamel sauce over the assembled moussaka. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown. Let it cool for a few minutes before serving.
