Instructions
Preheat the oven to 375°F (190°C).
Slice the eggplants into 1/4-inch thick rounds.
In a shallow dish, combine the breadcrumbs, Parmesan cheese, dried basil, dried oregano, salt, and black pepper.
Dip each eggplant slice into the flour, then into the beaten eggs, and finally into the breadcrumb mixture, pressing gently to adhere.
Heat olive oil in a large skillet over medium heat. Cook the breaded eggplant slices in batches until golden brown on both sides, about 2-3 minutes per side. Transfer the cooked slices to a paper towel-lined plate to drain excess oil.
Spread a thin layer of tomato sauce on the bottom of a baking dish. Arrange a layer of cooked eggplant slices on top of the sauce. Sprinkle with mozzarella cheese. Repeat the layers until all the eggplant slices are used, finishing with a layer of mozzarella cheese on top.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
