3 tbsp Red Curry Paste
2 tbsp Fish Sauce
2 tbsp Palm Sugar
4 Kaffir Lime Leaves

Instructions

Step 1 : Preparation

In a mixing bowl, combine the fish sauce, palm sugar, and red curry paste. Mix well until the sugar is dissolved.

Step 2 : Cooking

In a saucepan, heat vegetable oil over medium heat. Add garlic, ginger, and lemongrass. Sauté for 2 minutes until fragrant.

Step 3 : Cooking

Add the sliced onion, red bell pepper, and green bell pepper to the saucepan. Cook for 3 minutes until the vegetables are slightly softened.

Step 4 : Cooking

Add the coconut milk and torn kaffir lime leaves to the saucepan. Stir well and bring to a simmer.

Step 5 : Cooking

Add the fish to the saucepan. Cook for 10 minutes until the fish is cooked through and flakes easily with a fork. Season with salt to taste.

Step 6 : Serve

Garnish with chopped Thai basil leaves. Serve hot with steamed rice.
