Ingredients

3 tbsp butter
1/2 cup red onion
1 red bell pepper

cored, seeded, and diced

1 pound shrimp

peeled and deveined raw medium, patted dry

1 tbsp cajun spice mix

Chef Paul Prudhomme's Blackened Redfish Magic seasoning or other

2 cloves garlic

3 cups spinach leaves

loosely packed raw

1 cup heavy cream
1/2 cup parmesan cheese
Notes:

freshly grated

8 ounces whole-wheat fettuccine noodles

cooked according to the package directions


Instructions

Step 1 : 

In a large sauté pan over medium heat, melt the butter. Add the onion and cook for 3 to 4 minutes, or until the onion is softened.

Step 2 : 

Add the bell pepper and shrimp to the pan and sprinkle with the seasoning mix. Cook, stirring occasionally, until the shrimp are pink, curled up, and cooked all the way through, 4 to 5 minutes.

Step 3 : 

Toss the garlic and spinach leaves into the pan and cook for 1 minute. Add the heavy cream and Parmesan to the pan and then reduce the heat to low. Simmer for 3 to 4 more minutes, stirring occasionally, until the sauce just begins to thicken.

Step 4 : 

Mix the noodles into the sauce mixture until well combined, divide into pasta bowls, and serve warm.
