Instructions
In a large pot, heat olive oil over medium heat. Add the onion, garlic, and bell pepper. Cook until softened, about 5 minutes.
Add the tomatoes, coconut milk, lime juice, salt, black pepper, paprika, and cumin to the pot. Stir well to combine. Bring to a simmer.
Add the fish chunks to the pot. Gently stir to coat the fish with the sauce. Cover and cook for 10-15 minutes, or until the fish is cooked through and flakes easily with a fork.
Garnish with chopped cilantro. Serve hot with rice or crusty bread.
