In a small mixing bowl stir together the olive oil, butter, salt, paprika and white pepper.
Rinse turkey and pat dry with paper towels. Stuff turkey, if desired, and set on rack in roasting pan.
Pour water into bottom of roasting pan. Turkey should be above water, not resting in it.
Pour olive oil mixture over turkey.
Cover turkey with aluminum foil tent.
Bake in oven for approximately half of the cooking time required, basting with water in roasting pan every half hour.
Mix white wine and brandy together and pour over turkey. Continue roasting and basting until turkey leg is loose and has reached correct temperature.
Use the drippings from the pan to make an exquisite gravy.
