5/2 lbs Beef Tenderloin

trimmed and tied

1 package Puff Pastry
1 cup Duxelles
8 slices Prosciutto
1 egg Egg Wash
Notes:

beaten

1 teaspoon Salt
1 teaspoon Black Pepper
2 tablespoons Olive Oil

Instructions

Step 1 : Preparation

Preheat the oven to 400°F (200°C).

Step 2 : Preparing the Beef

Season the beef tenderloin with salt and black pepper.

Step 3 : Searing the Beef

Heat olive oil in a large skillet over high heat. Sear the beef on all sides until browned, about 2 minutes per side.

Step 4 : Assembling the Wellington

Spread the duxelles evenly over the prosciutto slices. Place the seared beef on top of the duxelles.

Step 5 : Wrapping in Puff Pastry

Roll out the puff pastry on a lightly floured surface. Wrap the beef, duxelles, and prosciutto tightly in the puff pastry, sealing the edges.

Step 6 : Baking

Place the wrapped beef Wellington on a baking sheet lined with parchment paper. Brush the pastry with egg wash. Bake in the preheated oven for 30-35 minutes, or until the pastry is golden brown and the beef reaches your desired level of doneness.
