Instructions
Rinse the rice under cold water until the water runs clear. Drain well.
In a pot, combine the chicken stock, minced ginger, minced garlic, salt, and pepper. Bring to a boil.
Add the rinsed rice to the boiling chicken stock. Reduce heat to low and cover the pot. Cook for 30 minutes, or until the rice is tender and the porridge has thickened.
While the porridge is cooking, dice the chicken breast into small pieces.
After the porridge has thickened, add the diced chicken breast to the pot. Cook for an additional 15 minutes, or until the chicken is cooked through.
Serve the chicken porridge hot, garnished with chopped green onions. Drizzle with soy sauce and sesame oil, if desired.
