Instructions
In a Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.
Add the beef cubes to the pot and brown them on all sides. Remove the beef and set aside.
Add the chopped onion, sliced carrots, and minced garlic to the pot. Cook until the vegetables are softened.
Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute.
Pour in the red wine and beef stock, scraping the bottom of the pot to release any browned bits. Stir in the tomato paste, thyme sprigs, and bay leaves.
Return the beef and bacon to the pot. Bring to a simmer, then cover and cook for 2 hours, or until the beef is tender. Stir in the sliced mushrooms and cook for an additional 30 minutes. Season with salt and pepper to taste.
