Instructions
Rinse the lentils under cold water and set aside.
In a large pot, heat olive oil over medium heat. Add onion, carrot, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
Add lentils, vegetable broth, tomato paste, bay leaves, thyme, salt, and black pepper to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender.
