Instructions
Wash and chop the lettuce, tomato, cucumber, red onion, and bell pepper.
Preheat the grill to medium-high heat. Season the chicken breasts with salt and pepper. Grill the chicken for 6-8 minutes per side, or until cooked through. Brush with BBQ sauce during the last few minutes of grilling. Remove from the grill and let rest for 5 minutes before slicing.
In a large mixing bowl, combine the lettuce, tomato, cucumber, red onion, bell pepper, corn, and black beans. Toss with olive oil, salt, and pepper.
Slice the grilled chicken and add it to the salad. Drizzle with additional BBQ sauce, if desired.
Divide the salad among 4 plates and serve immediately.
