Instructions
Season the beef roast with salt, black pepper, garlic powder, onion powder, dried thyme, and dried rosemary.
Heat olive oil in a large skillet over medium-high heat. Sear the beef roast on all sides until browned.
Transfer the seared beef roast to a slow cooker. Add beef broth and Worcestershire sauce. Cover and cook on low heat for 8 hours.
Add carrots, potatoes, and chopped onion to the slow cooker. Cover and continue cooking on low heat for an additional 2 hours, or until the vegetables are tender.
In a small bowl, mix flour with a little water to make a slurry. Stir the slurry into the slow cooker to thicken the sauce. Cook for an additional 15 minutes.
