1/2 cup Whole Wheat Orzo
4 cups Fresh Spinach
2 cups Vegetable Stock

Instructions

Step 1 : 

In a large pot, add olive oil, onion, carrots, garlic, and red pepper flakes. Cook for 5 minutes.

Step 2 : 

Add diced tomatoes, vegetable stock, and white beans to the pot. Bring to a boil, then reduce to a simmer. Cover and cook for 20 minutes.

Step 3 : 

Add whole wheat orzo to the pot. Simmer for 10 minutes, or until tender.

Step 4 : 

Add fresh spinach, salt, and pepper to the pot. Stir until spinach wilts.
