1/2 Onion

2 tbsp Soy Sauce

Instructions

Step 1 : 

In a small bowl, whisk the eggs and season with salt and pepper. Cook and set aside.

Step 2 : 

Heat a saucepan. Add olive oil, onions, scallion whites, carrots, garlic, and edamame. Cook for 30 seconds to 1 minute.

Step 3 : 

Stir in cooked brown rice.

Step 4 : 

Add the scrambled eggs, soy sauce, edamame, and green scallions. Mix well.

Step 5 : 

Eat and enjoy! Add more soy sauce if desired.
